Many great covers here. First one that came to mind when I read the OP was Johnny Cash doing Hurt (already mentioned a few times)

Concrete Blonde has a couple of great covers: Everybody Knows (Leonard Cohen) and It's a Man's World (James Brown)

I'm amazed Prince hasn't been mentioned yet. He is the king of others covering his songs and make them famous:
- Nothing Compares to U (Sinead O'Connor)
- I Feel For You (Chaka Kahn)
- When You Were Mine (Cyndi Lauper, although Mitch Ryder's cover is better, and Ani DeFranco ft. Maceo Parker does a haunting live version)
- How Come You Don't Call Me Anymore (Alicia Keys)
- Kiss (Tom Jones)

Prince also wrote Manic Monday for the Bangles, and co-wrote Stand Back with Stevie Nicks.

Here is a new cover I found a few days ago that is brilliant. This is from a guy who likes to take modern songs and cover them using older styles (jazz, Motown, dixieland, etc.). His group is called Postmodern Jukebox. I spent hours watching videos from him, but I think this one (the first I saw) is still my favorite.
