Yeah, a pound of flour takes up about 3.5 to 4 cups depending on humidity, coarseness, how well-sifted it is, and so forth.
never understood those American recipes using cups. The weight of the ingredient depends how compacted it is so you can end up with too much or too little.
I prefer metric measurements too and I'm an old fart!

Having attended a British run international school when I was living overseas, I know for a fact that the Brits were using the metric system decades ago, as was the rest of Europe.
