Oh, and guacamole is a must, a fresh lime squeeze and maybe a little fresh salsa.
tortillas pressed. Got some limes ready and some fresh chipotle salsa. Time to pull and crisp
I hit the onions, garlic and jalapeño with the immersion blender before throwing the pork back in.

Wow! I love these but have never made them myself. There is a pretty good Mexican restaurant close to us that does an amazing job on them so I usually just scratch the itch there.
Time to change that...I'm thinking heavy on the tomatillo and green chiles. I've been craving some homemade guacamole the last few days so this is good timing. Will post results.

I eat on mine for at least a few days. Made breakfast tacos with the leftovers last time with scrambled egg, pickled red onion, mexican cheese, and torchy's habanero hot sauce.
