What's for Dinner at Your House?

I got the recipe from Instagram, it was delicious.
On The Mahoney Menu Today. 8-hour Slow-Cooker Pulled Beef, With Cabbage & Mash. Washed Down With a Glass Of Concha Y Toro Casillero del Diablo.

On the 26th it was Mrs P's 60th and we were still in Malaysia and decided on Les Bouchons - a French bistro that does excellent steaks (among other things). This was my Aussie ribeye, medium, served with a dab of 'vigneron' butter, unlimited fries and there was also a house salad somewhere. She went for the rack of lamb but my photo is a bit blurred... That may have been the beer / wine / gin at work...

Enchiladas.

Mrs. Hippie has discovered that if she simply tosses me a "mystery ingredient" I'll go all Iron Chef and make something with it. It works. I'm often struggling to think of something to make, but if I have that one little push then suddenly I have all kinds of ideas.

Yesterday *bang* a can of green enchilada sauce hit the counter accompanied by a significant look. Message received. :)

My favourite filling for enchiladas is picadillo. Takes a little effort to make with beef and red chorizo and lots of spices, dried fruit and seeds but wrap that in a tortilla and bake it in some good sauce and cheese and -- to steal a line from the Copenhagen snuff folks -- "...it's pure chewing satisfaction."

It started out one way and ended up....

Thai Red Curry Beef and Veggies

- Pasture raised ground beef (ancestral blend: heart, liver, kidney)
- Diced onion (org)
- Thinly sliced shallot (org)
- Sliced mushrooms (org)
- Large dice yellow squash (org)
- Fresh ground black pepper (org)
- Cayenne (org)
- Jar of red curry paste (Thai Kitchen)
- Can coconut cream (org)
- Diced medium garnet yam (org)

- Yam: boiled until very soft - drained and mashed in bowl with organic high fat sweet butter
- Beef sauteed in house rendered organic ghee seasoned with cayenne and black pepper - removed from pan and set aside
- All other veggies sauteed in ghee until nearly done
- Beef added back to pan adding coconut cream and jar of red curry paste

All steamed until nice and hot and then ladled over with the above red curry beef dish...

The only thing missing was a squeeze of fresh lemon I didn't have in the house to brighten up the flavors a bit: delish all the same.

Et voila...
 
This afternoon, the Major's CO returned from lunch w/the Major's sister* w/a bag of groceries in hand. Said bag included: kosher chicken breast, sugar snap peas**, red peppers, & mushrooms. Given that the Major is still recovering from a broken leg, he & his CO collaborated to make dinner.

The result: an absolutely beautiful stir fry, which also happened to be thoroughly delicious with taste & flavor. The Major & his CO enjoyed it served with brown rice (the only acceptable kind of rice). As a bonus, there's just enough left over for his CO's lunch tomorrow***.

** the Major would gladly eat sugar snap peas raw, which he did while cooking

*** you think the Major would dare to eat these leftovers when his wife wanted them? You are clearly either single or divorced.

Mrs P found some stewing steak with a decent amount of fat on it at the butcher's counter yesterday and requested a stew. The sauce was onions, carrots, garlic, red wine, half a stock cube (they tend to be a bit salty) and water to thin it out as needed. I also put a handful of lentils in after an hour. Three hours on a low heat and done.
