I will be the only one home during the day Monday. So before the game I am gonna fire up the pit.
I’m thinking:
New York Strips
Shrimp
Flanken Ribs
Chicken Thighs

Was planning on using the small pit but the amount got out of hand. Fired up 1/2 of the bigger pit. The other half will be used to keep the meat warm and slowly finish the meats.

How do you prep and cook your sweetbreads? They're on my list of things to take a run at this year, never used them.

Very Sharp Knife
Throw them on the pit close to the fire but not directly on it.
Once they swell cut them in half to thin them out. And cut again when they puff up again. Thin slices cook faster and more thoroughly.

the sweetbreads are the smaller ones and the ribs are the 4” ones.

I can be there in about 9 hours. Quicker if I go by the P.D. and pick up the old magnetic bubblegum machine light to stick on the roof of the car.
Wouldn’t that be nice. And then head over to the ranch to get some hogs.

Can we get within about 25-50 yards so I can try out the hard cast 230 gr. SWC in the old Ruger .41 mag. on the little monsters?

We have 2 bow blinds on trailers that we put about 25 yards from the feeders but we can move them to wherever you want.

It's snowing here today so I'm going to throw an 8 lb Boston butt on the BGE. Using a taco seasoning rub for pulled pork tacos for the team at work tomorrow.
