Thanks guys! The dinner went off without a hitch, but (and you wouldn't believe me if I told...which, I suppose I'm doing right now) the next day I decided to do one more chicken breast and make a sandwich out of it. You guessed it. One bite, a few milliseconds of "Uh oh..." before well...I haven't been the same since. :laugh:
 
Worked late, had to find something easy to make. Hmmm, left over pork shoulder from the other night.... Voila - Cuban sandwiches. Ham, pork shoulder, swiss, pickles, mustard on potato rolls, buttered, smashed flat on a griddle for a while. Heaven.

A dynamite bottle of Riesling from the Mosel

This was a great wine pairing; the sweetness of the wine cut through the garlic mayo and the richness of the potatoes and eggs cooked in quality extra virgin olive oil.
