How can one tell the difference between a 66 GD (carbon) and a 800 GD (stainless)?

The tang should be marked 800 or 66. The blades are the same size. Both will shave the same. Ive seen the 800s in different looking scales. The 66 scales and pinning are the worst of them although they are 100% functional. IMO getting one rescaled is a good idea whether 800 or 66.
