Nah, other than one being carbon steel rather than stainless, there isn't gonna be much difference. I've used the 7 O'Clocks, they are both very nice, and the Perma-sharps are supposed to be top quality too.

I don't find all that much difference between blades these days, mostly required razor angle (which varies with the grind a little) and how long they last.
