Sorry this took so long I was away for a couple days!
I am not a recipe guy but heres what I do.
Make a chicken stock from an organic chicken-Drain liquid and toss everything but the meat.
Refrigerate overnight and then skim fat off.
Cut up carrots, lots of celery, onions, leek and some savoy cabbage- chop up a tomato or two. Salt, pepper, fresh parsley you can add a potato if you like. I will add some vegetable stock if I have any made.
Throw it in a big pot and cover with the stock and add back the meat and simmer till dinner.
You can add rice or any pasta if you like. (cook separately in stock)
I serve with a sprinkle of locatelli cheese and some crusty bread!l
