First attempt at Kimchi

My last batch is down to nil. With my new fermentation kit I've got to get another batch fired up. The last batch had Napa cabbage, green apples, cucumber and a bit of seaweed. I'm thinking something simple this time with just the cabbage and maybe some sweet onions. My cousin likes to add caraway seeds to his homemade sauerkraut. I wonder if that would be a good addition.

Did you include juniper berries in your last batch? They've been a welcome addition to my test batch of kraut.
No I didn't, but that sounds pretty good. My very first kraut batch is finished and I've been eating on it. It's a tad bit salty but the flavor is nice and crunchy. I need to make a Reuben with it.

"A Boy Named Sue"
Made a batch of Kimchi over the weekend. It tastes dynamite. I went with a simple recipe:

1 large head of napa cabbage
1 large daikon radish - spiral sliced
3 carrots - spiral sliced
1 whole head of garlic
ginger - about 2.5 ounces.
1 tablespoon of brown sugar
both sea and kosher salt - about 1/4 cup
2 bundles of green onions
1 cup of Korean pepper flakes
1 tablespoon of fish sauce
