What would you do with this?

It is supposed to taste like a butternut squash.
What would you do with it?
 
Cut n half..salt n pepper on each half...bake 400degrees for 1 hour then 350 for another hour..check after first hour for softness then add a little EV olive oil
 
+1 smalltank (but add freshly ground pepper after the cooking)

I do a "pasta" sauce with that: microwave oven in a covered pyrex bowl for a couple of minutes to soften it, then in the pan with boiled chickpeas, garlic, rosemary and oil, let it thicken then out of the heat add bacon, a pinch of salt. When the pasta is ready, use a ladle of the cooking water in the saucepan, reheat to thicken. Pepper like hell. A "dribble" of Evo maybe.

Serve with a Sassicaia red wine. :p

Interesting recipe. I assume you only put the "meat" of the gourd in the microwaves, don't you? And do you fry the bacon before putting it in the pan?
 
Yes, only the meat :) It becomes very soft and spongy, and it retains all its taste (thanks to the short cooking time with the microwaves).

I don't fry the bacon before. I actually use something we call Speck, raw, but you can use your wonderful Jamon too. Just don't cook it because I think it becomes hard and too "tasty".

This sauce is also perfect with homemade "gnocchi" ;)

Cook it in the oven as Smalltank has suggested.
I like to put some maple syrup in the mash or some nutmeg and/or cinnamon.

It also makes really good soup.
 
one of my favorite recipies with butternut squash is a morrocan vegetable couscous . Could probably use half of it easy !

Also a nice soup could be in order!
 
You can grate (raw) or take half of a roasted one, and mix it into your pancake batter with a good helping of cinnamon and some nutmeg. Great way to sneak veggies into the kids meals without them knowing.
Also works great for pumpkins after halloween.
 
I have done something similar to each of the recipes above. Butternut squash are kind of like zuchini in the garden. You either get very few or very many.

One of my methods is to grill it:
1) Peel the squash with a vegetable peeler.
2) Cut into cubes, disposing of seeds.
3) Put a couple tablespoons of olive oil in a bowl and add seasonings. Typically garlic powder, paprika, salt and pepper work for me. You may want to alter these depending on what you are cooking as a main dish.
4) Toss the squash cubes in oil.
5) Cook on the grill until fork tender. You can reduce cooking time by microwaving the squash for a few minutes before putting it on the grill.
 
Braise some pork shoulder sautee squash onion and brussel sprouts toast some pumpkin seeds combine on some country toast and put a poached egg on top breakfast of champions

Wanting for wisdom
Well for me it is mostly soup. My brother in law makes a very popular casserole with a layer of brown sugar and walnuts over half inch cubes of squash.
 
Soup is always a favorite as is raviloi. One thing I make with it is a casserole with potatoes, sweet potatoes, apple, butternut squash and goat cheese. I cube and boil both kind of potato and the squash. Once 3/4 finished strain off and mix all together with diced apple, onion, salt and pepper, sage, some sugar and butter. Put in a casserole dish and cover with buttered panko and remaining goat cheese. Bake at 350 until golden brown across top. Enjoy.

Sorry for not having exact amounts as I usually eye up what I need for this recipe.
