Other the weekend I made Mai Tais. Pretty good. I used both Don Q white and Plantation dark rum, Small Hand Foods orgeat, lime juice (gad, the quality of limes these days seems poor!) with some "super juice," Pierre Ferrand Dry Orange Curaçao, and a spear of fresh pineapple. I served them in some very cool, to me anyway, ceramic tiki glasses, I got from Temu. I may have to get some clear tiki glasses, though. I like mai tais with a float of super dark rum on top, and in general like being able to see the drink. I also want to get some pebble ice from Sonic or Chik a Fila next time for more authenticity.
The Small Hand Foods orgeat is wonderful, but not cheap. I made some of my own orgeat over the weekend, too, using almond milk I made in a cold juicer. I did not think much of the almond milk--I am not going to be a good judge of that, I really do not understand the concept-!-but the orgeat seemed fine, but to me the almond extract added way more flavor than did the fresh almond milk. Unfortunately all I had was artificial almond extract, so points off there. I also added some orange water and some brandy, in part to help preserve it. I used turbinado sugar. Maybe next time demerara.
I also made some grenadine, starting by juicing some nice pomegranates in the cold juicer. Orange flower water, pomegranate molasses (actually, what I used called itself "concentrate"), some very light rum to help preserve, and some lime juice partly for the same reason. Turbinado sugar. Fantastic stuff. Better than anything I can buy, I think. I find it lasts in the fridge way longer than the recipes indicate. I have used some rose water in the past, too. I seem to have run out. Have to go very easy on the rose water!
