The Thuringian mountians have a plethora of stone types that are useful for sharpening and one of the few region of the world I haven't tapped yet(Saxonian oil stone/trout stone, I believe there are others). You are in the prime market to get these types of stones, and older folks(who had them in their family) would rather see that tradition kept alive, and I agree with them with all my heart. Those traditions were the stepping stones we had to the society we have now(tech wise). Without scalpels half the population dies. *VERY* few people can rub a piece of metal on a rock until it's a scalpel. That's a skill worth saving.
