What size pan should i get? Debuyer Carbone Plus

Hello, looking at the Carbone Plus as my first carbon steel pan.

What i'm unsure about, is the size of the pan VS my hob sizes.

I'm looking at either the 28CM pan, which has a 20CM base. Or the 30CM which has a 21.5CM base.

I have a 21CM and a 18CM hob.

What would be ''okay'' to do? I've heard you shouldn't use pan that is smaller than the size of the hob, but the manual to my stove explains that for the 18CM hobs, i can use 15-18cm pans. They don't recommend using pans that are over 18CM, but say it's okay to use 15CM pans. But on the same page they show a picture, warning about using pans smaller that the hob.

For my 21CM hob, which recommends up to 21CM pan base size.

Should i get the 28CM pan with a 20CM base, which is 1CM smaller than my 21CM hob, which the manufacturer recommends. Or should i get the 30CM with the 21CM base, which is only 0.5CM bigger than the hob?


I apologize if this is confusing, english is not my first language. I'm just confused as to which one is actually better. I'm pretty sure i've heard it's better to use a pan that is slightly bigger than the hob, not the other way around
 
I have a 30cm and use a gas hob which has a much smaller hob diameter even for the biggest one.
From what i've seen, i think you have to worry about it more on flat stovetops. Induction or like i have, ceramic electric.

No issues if you start with medium heat and let it heat through evenly.
Yeahhhh i've recently been using a 3-ply Stainless steel pan. From what i had seen, putting it on max power until it got hot enough for it to prevent sticking was no issue. Based on the fact that my pan has become slightly warped, i now know that it is not recommended :laugh:

I didn't think about the fact that probably most of the people here are from the USA. I don't think i've seen anyone with a gas stovetop in their home, yet.

Based on those numbers, I'd get whatever you want.

The measurements are so close, it won't make much of a difference in heating vs size of the hob. We have inductions and can use a bit smaller with no issues or a bit larger and just make sure we rotate or stir often to avoid hot spots or lack of. But we don't worry if it's 1cm.

We own 3 pans, 1 paella and 1 crepe in DeBuyer. You will enjoy it, especially once it is seasoned.

That could be, it’s been ages since I used an electric one.

The Crepes today came out beautifully :)
