    So I've got some pork chorizo from the local market. What should I do with it? What's your personal favorite way to prepare it?

    Cook the sausage after removing the casing. Drain the fat and scramble with eggs. Serve in flour tortillas. Enjoy.

    Remove the casing and pan fry with finely diced or grated potatoes and sliced peppers/onions. Serve with Corn tortillas and Queso Fresca...

    Black bean and chorizo soup. Just dig around the internet for a recipe.

    Grill it over a nice smokey fire, slice it thin on the bias, and serve with arroz con frijoles (rice and beans -- I prefer black beans, but kidney beans are good too).

    YES!!! I just suddenly got hungry. The authentic Chorizos from Spain are the best, and a place in Norther NJ sells the picante (hot, spicy) chorizos too. Ole Ole in Belleville, pronounced Behyehveeyeh is open the 2nd Saturday of every month.

    It is good mixed into scrambled eggs and also refried beans.

    Chicken, Bacon, and chroizo. I fry the bacon, then fry the chorizo in the leftover grease, and then add some of that precooked chicken (southwestern Style) in the launch meat isle and the bacon back in. Makes my favorite tacos/burritos.
