I am gradually getting to the point that I can hold a yoga pose on one foot for more than a few seconds. I do wonder if people with wider feet have an easier time balancing on one foot . . .
a bunch of cilantro leaves
5 garlic cloves, skin-roasted in a dry pan
coarse salt
toasted coriander seeds
toasted sesame seeds
* grind to a paste in a molcajete
4 jalapeños, oven-roasted and peeled
* grind into the cilantro paste
11 tomatillos, boiled and peeled
* mash into the cilantro/chile paste
juice of half a lime
I know I've succeeded when it's so hot our mouths are on fire, yet we still can't stop eating it. The quality of a salsa is directly related to the time it takes to prepare it. My best salsas take more than an hour from start to finish.
