Lolita Lempicka Au Masculin is a nice vanilla scent that wears well and is masculine.
I'm not a huge fan of sweet vanilla scents, and that is - in my mind - kinda the antithesis of 'manly', but I find 'Uomo Moschino' to be very nice. Vanilla, but not too strong and complex enough to almost make you forget the sweetness.
Many here will reccommend Endymion, and it's the other vanilla scent I can tolerate (and own). It's nice, high-quality stuff, but I prefer the UM.
There are dozens of department store brands that are like this: just about anything by Calven Klein, for instance.
Creed Acier Aluminium: vanilla, orange, ambergris, musk.
This is IMHO the best kept secret in the fragrance world.

As far as a cologne I like Aramis......
While it's not front and center, Knize 10 has a distinct vanilla element, it's also quite manly and has many other excellent qualities (good sillage and last about 18 hrs.). I second Penhaligon's Endymion as a light vanilla that is not too "confectionery shop" sweet.

Also, I recently purchased a 0.5oz spray-bottle of Ed Hardy EDT for men from a B&B member. Last night, I spritzed some on the back of my hand, and was surprised at its similarity to (and difference from) Lolita Lempicka Au Masculin. I found this brief paragraph on the 'Net:
What's not mentioned is its light, powdery component... nice, and works well with the other elements. Three fragrances stick out in my mind that match your criteria.
First, Kiehl's Original musk is a sure bet for the vanilla lover. It has a nice vanilla dry down that is plenty "creamy."
Second, as has already been mentioned, Penhaligon's Endymion. I absolutely love this scent, primarily for its coffee note, but there is also a nice vanilla note hidden in there.
Third, Creed Original Santal. Don't let the name fool you, this stuff doesn't have much Sandalwood, but it is heavy on the vanilla and the cream. To my nose, this stuff dries down a LOT like the Kiehl's.
Out of the three, if you're going for price, I would recommend Kiehl's. If you're going for class and sophistication, I would recommend Endymion. The Creed is nice, but honestly not worth the money, IMO.

I'll second the above suggestions for Penhaligon's Endymion.
Something that you may also like is Floris Santal which has a very manly sandalwood scent with a very smooth and creamy 'texture' to it.

I don't know if it's Vanilla that I'm smelling, but I find L'Ocitane Vetyver to be quite sweet. It took me a few wears before I got the hang of it. I really like it now though.

You mentioned "not a gourmet" and I wonder exactly what that means to you? If it refers to the price some of these suggestions may not be what you want depending on what price point you consider "gourmet".

I've been thinking about this. I would recommend something from Serge Lutens. I cannot mention a particular scent as this is not my favorite genre, but perhaps someone more knowledgeable can (Chergui and Ambre Sultan seem to be the most popular).

Guerlain L'Instant Pour Homme
Tauer's L'Air du Desert Marocain
Caution: these scents are not for the shy or for those uncomfortable with “stuff that is too classy” (I am sure this is not the case of any of you, but I had to mention it).
