Now being from South New Jersey, pork roll was a staple breakfast meal. Not sure how it will go over as a beer though.

What's wrong with just drinking a beer and eating a pork chop?
There are a lot of things I like in this world: apple pie, dill pickles, cheese enchiladas, bacon quiche, even pork. But that doesn't mean I want it in a pint glass.
It's funny you mention that. Southern Star, one of the breweries around here, once put out their take on the German Rauchbier (using smoked malt). They wanted to call it "Pork Soda," but the Texas Alcoholic Beverage Commission nixed the label as potentially misleading a consumer into believing it might be non-alcoholic.
Such is life.
