I'll go out on a limb here and suggest it has more to do with protecting large groups from terrorists. Guys with box cutters did bad things.

Yep some places are like that. Knife is ok but they flip out over a bottle of water.Strangest WDW security experience I have ever had:
We took a family vacation (me, wife, 2yr-old daughter, sister-in-law) to WDW on October, 2001- just over a month after the terrorist attacks. As you may all remember, security was still a very visible operation with National Guard troops in the airports.
WDW had started doing bag screening, but was obviously still getting the hang of it. On the day that we were going to MGM, we are in the bag screening line when the screener sees the tote in the bottom of the stroller. "Oh," he says to his partner, "that's just the diaper bag. We don't need to check that."
No, I guess no self-respecting terrorist would hide a bomb in a diaper bag.
That, BTW, was the strangest Disney World trip I have ever had. Attendance was obviously way down because of the events of 9/11. We were able to walk onto Tower Of Terror and Rock n'Roll Rollercoaster with no wait. On, the other hand, I spent 45 minutes waiting to take my daughter onto the Dumbo ride.
Still, at least Disney is worried about items which could be used for violence/mayhem. When I go to the local Six Flags park, I'm convinced that they are almost more concerned that I might be bringing in food from outside than that I might have a weapon.
My problem was that it was ok at one screening and not at another on the same day at the same park.
