I recently lost my great uncle who always wore a handlebar mustache. I was thinking about growing one myself. I currently wear a trimmed goatee. So my question is, should I trim everything even for even growth? I know this means a longer growing time and I'm ok with that. Or do I just go a head and grow it? Any advice is appreciated.

Just let it grow, and use some wax fairly early in the process to start training it to grow in the direction you want.

Spot on. Just let it grow. Be strong and resist the inevitable urge to trim it when it starts to get in your mouth!
Just keep waxing it to train it. The fullest handlebars have the hair from the center of the lip grow all the way out to the ends.

Do not trim the mustache, keep combing it to the side, developing the split in the center.
Use some wax (Firehouse, Clubman etc) to help keep it off your lip.
It will take a few weeks to train your mustache to grow in the sideways direction.
