I've crossed a few things off my "must grill/smoke list" over the last couple years because of these threads.

This year, I am going to make an effort to cook the following on the BBQ:

- Pizza on the ceramic (everything from scratch)
- Smoke my own bacon
- Spatchcock chicken
- Beercan chicken
- Desserts...lots of Desserts

I’m stumped
Chili lime sounds interesting.
It's a mix of Sweet Thai Chili sauce, and a hot sauce ( I used some Huffman's & FD Deadly), brown sugar, garlic, Worcestershire sauce and lime.
Marinated for a couple of hours. Reserved some sauce for basting.

That is one serious BBQ Marty.

It was quite the project. Took a couple of months to complete.
i hunt and fish with this guy and have been a pall bearer for two of his brothers and his father!
I cannot remember ever not being friends with him!
The blue eagle on the side is significant! He has received 4 blue Eagles in his career! He is the only person in the history of the United States Customs Service to receive 4 Blue Eagles. Now that's saying something!!!!!
He's family!

That is a tasty looking bird and makes me want to do a Spatchcock Chicken as my first item this year too.

The charring and skin look perfect.
