Pita

I decided to make some pita bread the other day.

Recipe : 1 1/8 C Water
3 C Flour
1 Tsp Salt
1 Tbl Veggie Oil
1 1/2 Tsp Sugar
1 1/2 Tsp Dry
Let the yeast and sugar bloom in the water, combine flour and sugar in a bowl. Add oil to the yeast and sugar bloom then slowly combine the flour into the mix. This is a low hydration dough so it will become very very shaggy and start to flake apart while combining. So watch it carefully. Let it proof for 30-45 min and then cut into 8 peices. Slowly ball up the pieces and then roll out into sorta-circles…you want them to look rustic after all :p Preheat the oven to 500F when you are finished rolling them out. By the time its up to temp they should have risen slightly again. Add to the oven two or three at a time and cook until nice and puffy also golden brown. Promptly put under some tea towels in a bowl so they can rehydrate and become soft again. Cut and promptly enjoy with some melted cinnamon honey butter!!!
 
Thanks for sharing, definitely going to try this. We have been eating pita's quite a bit lately with marinaded/grilled beef tenderloin and chicken breasts, served with pepperocini, cucumbers, onion, tomatoes and tzatziki sauce. mmmmmm
