While watching Diners Drive inns and Dives last year, they had some peanut butter pie that looked tasty and easy. They did not give the recipe however, so I just went at it yesterday...
Mixed peanut butter with confectioners sugar to create a crumble mixture. Dumped a layer of the crumble into a graham cracker crust, followed by a layer of vanilla pudding, top it with some whipped cream and sprinkle a bit of the crumble mixture on top to make it purdy.
This was real good, super easy, and my wife was staying just too cool about my kitchen adventure. She reluctantly gave it a try, and I got the sly smile of approval! If you try this be warned, it is rich.
I was thinking next time to try a bit of cream cheese in my crumble mixture to add a bit of cheesecake flavor?
