Wonderful to watch him work. So much skill and knowledge . . . and always a gentleman.
Pepin's autobiography is a great read. His mother ran a shoe-string budget family restaurant, and he was a little kid in WWII France, after which he somehow became DeGaulle's personal chef at a very young age.
I'll always remember this quote, which I'm pretty sure is from this book, about the old school apprentice training of classical French chefs: a clueless American reporter (yeah, yeah, like there's another kind) is interviewing a super old-school chef (not Pepin), and asks him "How did you get into cooking?" and the old chef roars back at her---"Get into cooking? My parents sold me into slavery!!!!"
He and Julia Child had the best rapport--it was great to see them together.
The book is called "The Apprentice".

of course he starts out by opening a bottle of wine and pouring two glasses, one for him and one for her "just in case she shows up"
What a chef indeed.
I enjoyed some of his videos on YouTube a lot.
