    From left to right:
Paring knife - good for peeling potato and small food prep items
Larger paring knife - Apple cutting. . . both paring knifes are pretty good to put on a platter with cheese and crackers if you don't have separate cheese knives.
Boning or Filet knife - good for cutting out bones from meat - personally I don't have a lot of use for boning knives
Bread knife - great for cutting loaves of bread and some folk use them to cut tomatoes - the serrations saw through so even dull you will be able to slice your tomato.
Carving knife - Have turkey, roast, etc. this is the knife to use. ( I tend to use a chef's knife)
Chief's knife - pretty much the work horse for chopping, slicing, dicing, whacking the heck out of a clove of garlic.

    I hope this helps.

Great summary. A great pair of kicthen knives is priceless. I love cooking and my dad used to hone our knives and polish shoes on sundays. and treat the leather that needed conditioning. Taught me a lot. I still take joy now on Saturdays when I shine my shoes and condition my stuff like my bike, car, leather, etc.

Nice. There are a lot of stories on the interweb about only needing three knives:

I have four main knives - chef, bread, paring and carving.

A good set of kitchen knives is definitely a must have. Of all of the items on our wedding registry, the knives were the only thing I really cared about and insisted on. My wife thought I was nuts listing knives that were upwards of $100 each. I had to explain to her that those were the cheapest knives to go with. In hindsight, I wish I had stepped up a bit to the next series. Live and learn. Since then I've acquired a couple more knives whenever I find a really great deal (usually at an outlet mall in the US).

Bahahaha! Well said! I hate to even admit this, but a couple of times now I've been so eager to open a package that I popped the blade out of my DE and used it...and then put it back! I admit it only because I find refuge in the anonymity provided by this forum.

The Chef's at the Dining Room I used to work always said this.
My wife says it too (She's a Chef also).

Dunno these, but I had a set of hollow ground Case kitchen knives (they were my Mom's) I never used. Gave them to my daughter.

I agree, I use a chef's knife for almost everything. Bread knife for bread. Rarely a pairing knife unless it is put on a platter.
My boning knives are not for regular kitchen use and have not felt the need to acquire a carving knife (but I could see the use for it).

Sometimes, when no one is looking, I will use SWMBO's Santoku for chopping and dicing vegetables.
