Stick with the stock wire grill.
I've had my Weber Gold for 10 years now, and the grill is still holding up great.
The stainless steel grate will work fine, especially if you lubricate it each time you use it after giving it a good scrub. However, I found an aftermarket replacement made out of cast iron last year and never looked back after making the replacement. Need to let it heat up another 5 mins or so to get the heat level up but when you do you get great grill marks and less sticking. Made by a company called Craycort, costs about $80. Comes preseasoned and should last forever.

That grate is cool. But I've never seen a need for it, I generally don't do much cleaning of mine just scrape with wire brush and then an oiled paper towel right before cooking. Then leave the grill 'dirty' until next use. Weber themselves also make an iron grate that allows you to retain the trapdoors for the charcoal on the sides.

I don't NEED 60+ razors either. Not too worried about ease of cleaning , I do like sear marks, non stick and other attributes of cast iron. I think the Craycort may be a bit mor versatile than the weber system.

Have the Smokenator as well...works pretty good if you're not cooking for a crowd. With those two aquisitions I got rid of my Smokey Mountain Cooker - patio was starting to look like a Weber showroom (not a bad thing, just a small patio). I think you would be pleased with Craycourt - should last forever with minimal upkeep.
