    Default Shibazi small Chinese vegetable cleaver

    Anybody used one of these? I just ordered one.

    I have a CCK (Chinese Chef's Knife) - the shape in general resembles a meat cleaver, but it's thin enough to slice like a champ. It is wonderful for push-cutting veggies and handles everything else pretty well too. (note: I don't de-bone anything)

    Shibazi's have a good rep I have been looking for the super large one that the host Ching-He Huang of the cooking channel show Easy Chinese cooking but can't find it locally without EMS shipping charges (expensive).     it should be on par with the CCK.

    Yeah, I bought it based on general, random comments I read online... I was just curious if anyone here had hands on time with one. The one I got is the same size as the CCK 1303, but it is stainless. MondoJ, I bought it off ebay for $20, from a US seller, compared to $30 and expensive EMS that I was seeing elsewhere for the same knife. I will pm you a link...     Just a follow up... my Shibazi showed up today. Fast shipping. Was in perfect shape in the original packaging, brand new. Edge was sharp... not razor, bleeding edge sharp, but more than usable. I may give it a touch-up.

    I think it's going to be a great cleaver for $20. I would like to compare to the CCK, but I don't have one. Maybe at some point. I may try to post a pic later, as well, if anyone is interested.

    I use a wooden magnetic rack for my stuff. You can buy a saya for cleavers too, but I think they are expensive.

    I have a nice nylon edge cover . . . somewhat similar to the covers you put on ice skates for walking around when off the ice.

    I store mine in a deep drawer in my island in a wooden knife rack, btw good looking cleaver.
