i was thinking about making a fennel mustard for the sausage. I didnt add any fennel to the links because I wanted to stay away from the italian style sausage but I feel it needs something else.

Was thinking it was awfully early for deer, even up there. Archery season for deer here doesn't start until July; rifle in September

no my hunting buddy and his g/f are coming over today got the grill ready, have a few soaking in some beer with onions, will grill a mixture of red and yellow onions with fennel and a real small bit of sage i dont want the breakfast taste but love sage in my sausage. I bought a few different kinds of mustard and some sauerkraut and some nice italian rolls from the bakery this morning, some from scratch mac and cheese. i try to eat on the healthy side everyday because I do go to the gym allot but today I am going to fat guy it up !
yeah it is early for deer here as well early oct i believe is when fall deer starts nov is when gun season starts thats when I go i'm trying to use up what's left of my venison because I will be hitting bow and rifle season this year lol.
In wisconsin you have to shoot a doe before you shoot a buck, and I received a free buck card so I will be using it first and will be getting a buck for sure this season man I cant wait turkey season did not pan out well for me and I might be doing a little squirrel this year never have but very interested. So local b&b guys might have to do a pot luck get together some time in the near future lol

Never had squirrel before, might be a lot of work for not much meat. Sounds like you are going to be stocked up for a while.
lol i would need ALOT of squirrel to make sausage, that would be a more cook on its own type deal lol plus im not 100% sure about eating squirrel yet lol
Don't fear the squirrel. Ah...there may be some joke there but I do not see it at the moment. Anyway, properly fried Tree Rat is VERY tasty. My old Da could do a squirrel fry up that would have you biting your fingers off trying to stuff it in your gob. Sausage? Sure you could but you would need some beef fat to make it work. Squirrel has about zero fat on it.
