    Default Eggplant..2 ways..yum!

    Well..wife went to work so me n our daughter at home..I got creative with what was in out veggie crisper droor in the fridge...this is my 1st attempt in doing this..l
    First pic...
    chop some eggplant in slices...plate some flavored bread crumbs (I used Italian)...3rd plate..mix 4 eggs..well beaten

    Next pic...
    Cuisinart fryer (turn to max 375*)..half eggplant amount dipped in eggwash and coated with plenty of breadcrumbs
    Cuisinart grill/griddle combo (turn to Sear and Giddle option)...place thick pieces of eggplant on one side..brush lightly with teriyaki sauce..close lid and let brown..flip when browned well

    3rd Pic...Fried eggplant

    4th pic..grilled eggplant with light Teriyaki brushing

    5th pic...and now you're wondering..ok..whatcha gonna have with this...what else?...Mozzarella Cheese/fresh chopped tomatoes

    Looks great! That is the best cooking IMO, using what you have on hand and not "over-thinking" it! Bravo!

    Dipped in egg and crumbled saltines, then pan fried is nice.

    I like to slice it thin and then roast it with olive oil and oregano, then put a big dollop of ricotta cheese on top with a simple tomato puree/garlic/basil/chili pepper flake sauce

    I use two different methods to fry eggplant. I'll either slice it thin, dip it in an egg/milk batter, then fry, or slice it thick (3/4-1") and use the traditional three step flour dredge/eggwash/breadcrumb method.

    I fry eggplant a lot, mostly for eggplant parm. What I've been doing recently: Crush some tomatos onto crusty bread so the juices soak in a bit, put arugala on top of crushed tomatos, put the fried eggplant on, olive oil and some balsamic vinegar = awesome sandwich!

    Eggplant is a huge dish here, served up in more ways than I can count! A great recipe is Moroccan eggplant, which is a little complicated to make, but oh so tasty! Let me know if you are interested, and I will post.

    Mozzerella is a given, I can't believe I forgot to list it. Sometimes I'll use the oil from a jar of sun dried tomatos instead of EVOO.
