    Tastes great. Bacon might be a touch on the smokey side, so I'll probably use one fewer chunk next time.

    Pancetta is slightly salty, but I think that's part and parcel of being pancetta.

    Overall, I'm most impressed with the intensity of flavor and just plain bacony goodness in both. Way better than even the best store bought that I've tasted.

    I looked up the recipe for the bacon that you mentioned and its really simple. I don't know why I haven't done it. I now am in the search for a local butcher or some one at the farmer's market to sell me some pork belly.
    I'm experiencing a sensation altogether new to me, and frankly... I LOVE IT!

    If you come of short, there are several great mail order options in the back of Ruhlman's book. I'll send them to you if you need them.

    I'm trying to source some Mangelista pig belly. This is supposed to be the Kobe of pork.

    There is a local butcher place close to where my parents live that they get meat from all the time. If nothing else, I will get it from there next time that I am down to see them. They get to see the little one and I get pork belly, win-win. However, if all else fails, I will definitely hit you up for those. Thanks!

    I'm not sure what Mangelista pig belly is, but I feel an overwhelming compulsion to have it tattooed on my chest.
