isn't the main difference between the kani models just the main component thickness and for the the 70-90K series the length?

I haven't done enough to know for sure (the 60K is just linen and cordovan). I'm experimenting with normal linen (40-60 laps), followed by the secondary leather on the fine stars (20 laps or so) and finishing on the cordovan (40 laps or so). Haven't done enough to know if it makes a difference, but the secondary leather on the Fine Stars definitely has a lot more draw than the main leather component. One could probably skip linen altogether and just use the 2 leather components.

Thanks for the info. I've heard their linen is like cardboard and not the most pleasing thing to use, so the 2 leathers may be a good alternative

I can't comment too much on this as I bought my 60K used and the linen was well broken in. It is my favorite linen, but I've really only used a TM and Ambrose to compare. I have 2 Scrupleworks strops coming and I've heard his linen is great, though I won't know for awhile as there was a 3 week backorder to when he could get to making mine. Hopefully they;ll be shipping in the next week or 2.

I look forward to hearing what you think if the Scrupleworks stops. I know they've been quite popular recently. Do use any pastes on these strops? I think it would sacrilege to put any paste on the Kanayama linen, but with several strops I'm curious what others do

No pastes (I've actually never used pastes of any kinds). I am debating getting a simple 4-sided paddle strop to mess around with some diamond pastes and CBN, but that would be more for experimentation as the edges I get off any of my finishers are perfectly fine for my face.

I've never used diamond paste, or CBN, or the Dovo pastes, etc. But I do like to use CrOx to dial in an edge off an hone, and for upkeep between honing sessions. I find using it every 5 shaves or so saves me from going to my Y/G Thuri. I think of it not so much as sharpening, but just very fine tuning of an edge.

You're probably right on track with the paddle strops though, I think those are best for playing around with pastes rather than putting it on a prized strop

The Kanayama strops that come with the suede secondary have perhaps the nicest piece of suede I have ever seen. 90% of the time I go to natural linen followed by the Kanayama suede and then on to the finished leathers. The finished leathers I use
be it roo, horsehide, or bovine depend on the razor I am using.

they all have a slick leather piece and a suede sort or leather piece. one of them also came with a linen like piece. I use the linen first, then the suede which has real heavy draw and is a bit of a struggle to strop on unless you use no pressure at all, and then the slick which is ultra fast and easy.

one is signatured by the original guys son i guess who started making his own and otherwise looks identical. one is their 50k i think, thick leather with the 3 pieces, and the other one is all decked out in gold stamps and stars.
