Would there be any value to stropping between grits, say, in the 8k-16k range? I haven't tried it, but I'm not sure my noob technique would allow me to notice any difference.

Uh-oh.
I do not see any, you are rounding the bevel every time you strop, then you have to undo the stropping on the next stone.
Apart from that what do you gain from stropping after every grit stage?

I prefer waving a rubber chicken over the razor in between grits.
It might not help, but it can't hurt either...

I've talked to a "pro" (he makes money honing) that does this very thing. I found it strange but it's his technique.

That depends, are you using hominy grits?

I tend to strop a little as I hone, keeping a small bench or loom strop handy. It's my substitute for a bowl of water or a tap, I wipe the razor and give it a few quick strops before I check the edge or change grits. Palm stropping works fine too. If my honing is interrupted I'll give the blade a few strops to dry the edge off before I put the razor down.
Ah, well if you want to count stropping it on my pant leg, or preferably the front of my shirt, then yes I do strop between grits. But not on leather.

Wiping yes, regular stropping no.
What ever you accomplish with that stropping would be gone within the first stroke on the next stone.
