    Actually, I find that most oak will impart a certain bitterness to the meat.

    Today it's pecan.

    My number one choice for smoking pork is cherry, but it's hard to find in these parts.

    The ribs were so tender I ripped the first slab when I lifted it from the grill.

    The pulled pork is for packing and freezing. The ribs turned out real nice.
