Superiority of Cast Iron

My Lodge cast iron square grill pan and 10" skillet see quite a bit of use.

I cook a chops, a whole chicken, or like the other day, two cornish hens in the grill pan, and my once in awhile Sunday morning eggs slide ride off the skillet.

You just need to keep them seasoned, by cleaning them right after you cook. I drop some kosher salt with a dash of water in a hot pan, and work it around with tongs and a paper towel. Then, before it cools, I spread a very thin layer of canola oil over and in it.

I have been cooking with cast iron for many years. I have my grandmother's cast iron dutch oven and it is a dream too cook with it. That dutch oven is not a Lodge. I cannot remember the name of it right now, but I looked it up online and it is a desirable piece of cooking equipment, with people willing to pay quite a bit of money for it.
