One of my favorite (and easiest) summer no-cook meals is a classic tomato, corn and black bean salad - ready in minutes. If the corn is fresh enough, you don't need to cook it, just slice it off the cob. For a whole meal, just add some cooked chicken or turkey from the fridge or buy a rotisserie chicken. Done. Great for lunch the next day too or as a side dish for anything off the grill.
