I would contact Bernd at Shavemac and have such a knot made, his quality of work and hair is outstanding. The best priced hair in his selection for such a brush would be finest grade, not sure if he carries a "best" grade. I have one already in this hair and make two more for myself. Great bang for your bucks!!

I'd go for a bulb shape. 30mm/fan will be massively floppy & moppy.

This is a function of hair structure, density, and loft. There is no more reason for a 30mm fan to be floppy than a 24 or even 18mm fan. Just make sure the loft is low enough that its not floppy like Ignatious pointed out. If you go with the Shavemac option Bernd (the owner) is very knowledgeable and should be able to suggest a proper loft. My gut tells me 55~60mm should be good though.

+1 Seth! So much more goes into the floppy/stiff feel of a brush than knot size, and I would actually expect a larger knot to be less floppy, all other factors being equal.
