New Year's Eve bring-a-dip thread! (recipe thread)

Got a favorite dip? Bring it!!

My absolute favorite is a variation on a chili dip using Cincinnati's famous Skyline Chili -

Spread a package of cream cheese on the base of a large glass baking dish. Sprinkle on diced onions and jalapeños. Pour on a can of skyline chili. Top this with a LOT of shredded cheddar (the sharper the better, very finely shredded though). Sprinkle on more jalapeños and onions. Bake at about 350 until the cheese is melted, then top with some tomatoes and serve with good tortilla chips.

Another great one (total crowd pleaser) -
2x10 oz. packages frozen chopped spinach, thawed and drained (thaw overnight, drain REALLY well)
2 cups cottage cheese (full fat. no skim, you pansy!)
1/4 cup butter, cut into pieces
1 1/2 cups American cheese, cubed
3 eggs, beaten
1/4 cup flour
1 teaspoon salt

Thoroughly combine everything and then pour into a greased crockpot. Let it cook for at LEAST 4 hours on low. It willl thicken up beautifully. Goes great with a good loaf of crusty bread (like.... homemade sourdough for example).

Good old queso -

1 lb of Velveeta
2 cans of Rotel
1 pound of Owens Hot sausage.

Brown and drain the sausage, drain the Rotel, toss into the crockpot with the Velveeta cut into cubes.

Stir every 20 minutes on low.

Serve with tortillas and chips.
 
A friend's so called "Killer Dip":

One package of Uncle Dan's Classic Ranch Dressing mix (powder)
8 oz cream cheese (brick)
16 oz cottage cheese
16 oz sour cream
16 oz mayonnaise (not Miracle whip or other salad dressing)

Mix with wire whip and refrigerate.

Good immediately, and better the next day :biggrin1:

Tip: Also works well as topping for baked potatoes!
