If you like pastrami, you'll love prosciutto... Once the eggs begin to "firm up" in the pan, put some thin slices of Parm or Motz Cheese then the meat and top off with some cracked black pepper, and a light drizzle of good olive oil. Fold over and let it warm throughout till eggs are done, and serve. Voila! Let me know what you think.

That looked great. I'll bet that a chunk of that omelet, on an English muffin, with some cheese, would be great.
 
I have a question, do you boil your pastrami after smoking it? If so, how?

What I do is steam it to serve, I place it in a colender with a cover over a pot of boiling water. The meat is 100% cooked prior to this step.


Nice looking snack, Jim. Nicely turned omelet. Flipped omelet? Folded omelet?

Air flipped then rolled, I was not planning on a photo so its not as tidy as I could have made it.:blush:

I wish I had the time to eat/cook like this every day like Jim....:blushing:
