Besides spending years watching ebay and the BST, is there a resource for values on DE/SE razors?
Razor's have no intrinsic value - the amount someone is willing to pay varies widely, and changes over time. You're best bet is to survey recent sales of products similar to what you have/want and take an average.

That doesn't seem right.
Intrinsic value is not the same as market value. A razor has intrinsic value in that it has a valid function, i.e. shaving. Or another measure of intrinsic value is the amount of labor and materials that went into it; the razor is the equivalent of so many man-hrs and so much materiel (which have their own intrinsic values).
Market value is independent of these assessments. How badly do I need to shave? How badly do I want to shave with that particular razor? How collectible is the razor? These affect the price irrespective of the intrinsic value.

Actually, from a philosophical perspective, I'd agree that values are objective, not intrinic (or subjective).
But how many times do we have to go over THAT in these "common razor prices" threads. I mean, come on. ;-)

Prices fluctuate. The price Fat Boys are going for on the bay these days simply astounds me.
Is it safe to assume that prices are rising currently? I would think that given the current rise in interest in this hobby.
