I see the difference between the two different configurations, but why are they? When would somebody use one version over the other?
Actually open combs are not designed for longer beards.
The open comb design was Gillette's original design and was the only type available until the late 1930's.
The design was changed to the safety bar for production cost reasons ....not because people had shorter beards
The open comb is simply the older desing and some people prefer the shave that they give. Me included.

Any recommendations for an open comb other than the Mühle? I've been using a Fatboy, Futur and an 89L, but have been thinking about adding an open comb to the collection.

The only exception would be the old R89 by Muhle...

+1; many people say that open combs are more aggressive, but I found the Merkur 11c (open comb) to be milder than the Merkur 34c (safety bar). Not too mild, but noticeably less aggressive.
Get both....
