    Default Fois Gras!

    Just had my first taste of Foie Gras last night, went to visit my sister in SF, went to Burger Bar.
    Had their Kobe beef and foie gras burger!


    I am now hooked on this most delicious form of "torture"

    PETA can bite me, I'm going back for seconds!

    It has a wonderful flavor, but real foie gras is served without anything else to dilute it. Basically just seared a little on the outside, just enough to warm the rest of it. And semi-raw is the best way I can describe it. Again, good flavor, but the mouthfeel took away all further enjoyment for me.

    The texture and the appearance were very close to Marrow.
    But the flavor, was oh so good. It was like rendered duck fat, slightly salty, melted in my mouth was greasy and light at the same time.

    I am in need of it now.
    Time to make some phonecalls.

    I can't bring myself to eat or enjoy any organ meat

    Respect to you guys that do. I've had well-cooked fois gras; damned near threw up from the texture.

    Good luck - the only place I can find decent stuff near me is in a specialty cheese shop, so you might try giving one of them a call. They always have some, but im getting some special stuff brought in specially for my birthday

    One of my favorite once-in-a-while treats. I prefer it cold. D'Artagnan is a good source.

    There is a lot of great foie being raised in my area of the Hudson Valley of New York.

    BTW, I have some good news. If you had foie gras in California it was not from tortured geese. That type of fois gras is illegal in California. You can enjoy it without guilt.

    Actually, the ban on traditional Foie was lifted.


    And second, I know how everything is prepared that I eat, and have seen that production.

    I feel no guilt for anything I eat. Be it veal, Foie Gras, or any other "alternative" methods of production.

    Foie gras is one of those things I miss. Along with pâté, chorizo, marrow, tripas and tripas de leche, and lengua.

    Marrow bones that have been hollowed and filled with a mixture of chorizo, chopped onions that have been lightly browned in butter, and then topped with marrow and cotija cheese. Damn if it's not tasty.

    That sounds so disgusting.... But I still miss BBQ meat, and it's been 10 years. Not that I'm "tempted," but it still smells good.

    Sadly, the only downside to Fois Gras is that it is not Bacon.

    HUGE Foie Gras fan!!! No love for the cold/raw version, but saute that puppy up in some butter, and count me in!

    Not that big a fan of it personally, but I've got no problem with it the means of preparation at all... YMMV and all that
