Here's a good starting point. I've just begun my journey into OO soaps. The two that I've tried so far are Aleppo from Syria, and Olivella from Italy, with Papoutsanis from Greece waiting in the wings. Aleppo and Olivella are both great, but I lean towards Aleppo as far as how my skin feels after using it. Both are pretty much fragrance-free, save for the smell of olive oil. But I would say Olivella has a slight edge over Aleppo in the scent department.
I have sensitive skin as well, so I know where you're coming from. There is no doubt my skin is enjoying these soaps. I'm finding it less and less necessary to use moisturizer on my face with each passing day. After using these soaps for the past two weeks to great effect, I wouldn't hesitate recommending them to anyone.
