I grilled some flank steaks and cooked up a dozen racks of babybacks for my family today. I'm anything but a BBQ expert, but everything came out really well and my folk's neighborhood had a great fireworks show to cap things off. All and all a pleasant family holiday to celebrate the birth of this great nation.

What are you guys planning to celebrate the 4th?

I have an 8-pound butt and nine racks of loinbacks on now at 225 with a black-cherry wood fire. Probably add a few armadillo eggs and sausage later.

A very happy and safe Independence Day to all and let's take a moment to think of those who are serving, those who have served, and those who gave all.

Unfortunately the Mrs. and I settled for cheeseburgers from McDonalds (which by the way is much better here in Japan) on our way to the base fireworks show. BBQ still sounds much better! Congrats on a successful evening with the family. :cool:

Going to a wedding tonight so my cookout was last night. BBQ'd chicken leg quarters.

Not as good as a pork butt but still tasty

I'm stuck at work until 6pm, but after that my wife and I are hosting a whole helluva lotta people at our house for a grill out, bonfire, and fireworks. A friend of ours "moved some stock around" to swell his fireworks budget, so...with any luck at all I won't be starting a "Home salvage advice?" thread in the Barbershop that will, given enough time, morph into something completely unrelated. :lol:

Interestingly enough, last night in my neighborhood seemed like WWIII. I jokingly told my wife that tonight we return fire. :biggrin:

I grilled up a nice bottom sirloin cut into big chunks on kebabs the other night. So tonight I'm not going to do anything too fancy. I'm thinking I can do an entirely "american made" menu: Louisiana gulf shrimp grilled over ozark lump charcoal, home made pasta from what I'm pretty sure is American wheat, and pesto made from basil grown on my deck and california olive oil. I may be out of luck with the parmigiano though. Hmm, I'll have to think about that a bit.

It's pouring here. Any cooking is going to be done inside. But since I work midnights, sleep is the only thing on the schedule for today.

Good ol' traditional "build your own" monster burgers at my house....

And of course all-you-can-eat clams on the barbie......

I've had a brisket smoking away since early this morning, and some spares just in case we need more food. Bacon-wrapped, stuffed jalapenos are keeping the meat company on the smoker, and the beans are catching the drippings.

I also made two kinds of BBQ sauce (traditional bourbon/sweet, and wicked vinegary/spicy), homemade potato salad, and apple pie. I am currently debating whether to mix up a margarita or a Tom Collins.

My in-laws are staying over and are taking the older kids to fireworks. My plan is to stay at home while the youngest sleeps and retire to the porch with a Monte #2 cuban and a Glencairn glass full of something nice.

One son is gone on a mission trip and the other one wasn't hungry, so my wife and I just went to a good BBQ restaurant (there are lots of them around here). We had pork ribs, baked beans, coleslaw, french fries, and iced tea. Plus delicious cream pies (she had lemon, I had chocolate) for dessert. Yum! :tongue:

No muss, no fuss!

We just finished off a half hog that we started at 4AM.

The neighborhood kids wanted to help, so we put them to work taking coals from the fire box to the pit. That's the worst job in the world if you've never done it. It involves digging into a fire with a shovel to find stuff that's hot but not on fire anymore. We were glad to let them lend a hand.

I always make mine with goat cheese and chorizo. I'll have to give yours a go next time I'm cooking out.

Can't get enough of those!

Just the two of us yesterday evening so we kept it simple with a couple of Nolan Ryan (yep, the Texas BB HOF) strips on the grill with a link of beef sausage for snacking.

The days surrounding the 4th was always a big cook-out day with my F-i-L. His birthday was the 5th and he supplied the party meats. A couple of 30+ lb briskets, several split chickens, and of course, the obligatory hot links. Added to the succulent meats were all the delicious side dishes, beans (pinto not baked), 'tater salad, various relish trays (got to have pickles and jalapenos with BBQ), a plate of sliced tomatos (probably omitting something, the table was always completely covered with side dishes). We sat out on the patio and ate and sweated, and sweated and ate. Ahhhh...those were the days my friend I thought they'd never end...
