I have butter and margarine in my household. I like butter but I haven't mastered the art of not leaving crumbs in it yet, much to Mrs. Chip's chagrin. As for why people would possibly eat margarine, I know a few lactose intolerant people and even butter causes them issues.

I grew up on margarine, but not all margarines are alike. It had to be Becel -I believe in the 'States it's marketed as "Promise" - It's high in polyunsaturated fatty acids and actually reduces your blood cholesterol level. It's got %80 less saturated fat than butter and no trans-fats. Plus, unlike most, if not all other margarine it actually tastes good, close to butter, but not in the artificial "im trying to taste like butter" way if that makes any sense.
Although now that I've moved out, it's butter all the way, you just can't bake or cook properly with margarine, and although I do occasionally enjoy it on toast, or especially to make my rare Kraft Dinner with, it's not worth keeping margarine around.
Don't forget.

A: Doppio burro (double butter)
Even the beloved fettucine alfredo is usually prepared incorrectly, using butter, Parmigiano-Reggiano, and heavy cream. This is really fettucine alla panna. The original recipe calls for Parmigiano-Reggiano and double butter.

Personally, I grew up on margarine. I will no longer allow the abomination in my house. Butter tastes better. YMMV, but shouldn't. Just as important to me, is health. Let me just say, I am not a health nut. But, butter is natural. Our bodies are not designed to break down and use the synthetic crap that goes into margarine. The most important factor of all, is it taste better!

Margarine gets a bum rap.
Yes it doesn't taste as good as butter, but many of the anti-margarine claims here are just not true.
If you're picking the right margarine it has;
No transfats - butter does.
1/4 the amount of saturated fat as butter.
40% less calories than butter.
No cholesterol - butter does.
And as far as the 1 molecule away from plastic claim, not only is it not true, it's non sequitur. Bleach(NaClO) is technically one molecule away from Table Salt(NaCl)! Does that stop you from eating salt?
Yes, butter tastes better and cooks better than margarine, that's why it's better, for no other reason. Please stop propagating half truths and downright absurdities about margarine. The margarine of today is not like the margarine of the '70s.

The reason margarine gets such a bad rap is because of taste. To a chef, taste comes before health, as is evident by the books chefs write and by the meals they serve.

Try that sentence with margarine. Call me margarine because I'm so on a roll? It just doesn't roll off the tongue.

Sodium hypochlorite it technically one ATOM away from common salt. Margarine is a long chain polymer and as such it is basically like a plastic. It's made by partially cross linking light oils like cottonseed in a chemical reactor similar to the ones used to modify petroleum products. Agreed some more recent versions are a bit lighter on the heavy fats that the old stuff, but it is still synthetic.

To get from NaCl to NaClO, one atom of oxygen is added - it is chemically bonded. The molecular wt will increase by ~16 units and it is still a neutral compound.

Today's eggs were fried in bacon fat. Sometimes I just have to do that, it goes back to my Appalachian roots.
Decided to try a little experiment with the local squirrels once. Put out a chunk of butter on a small plate with a chunk of margarine on another plate. The squirrels sniffed at the margarine but ate the butter. The margarine was untouched. Now, if the squirrels won't eat it, then why should I?

We have a lot of squirrels, chipmunks, rabbits, ducks and geese that visit our yard. If you drop a nut, some popcorn or a piece of bread, it won't last long before being eaten. Even on the worst day, it wouldn't last the night. However, last week, my wife dropped a Combo snack on the patio and it sat there for days. Nothing would touch it. Finally after it got rained on and rolled onto the grass, a chipmunk started to take small bites from it and it was still mostly there when they finally mowed the lawn and it disappeared.
I don't know the ingredients, as the package has been tossed, but it probably had lots of partially hydrogenated oil in it. Isn't that the main ingredient in margarine?

Unfortunately, my golden has jumped up and eaten whole sticks of butter off the counter before. Those retrievers really do love that butter.

The big question is - would they scarf down a stick of margarine? I'm sure bacon fat would disappear quickly.

I voted margarine, but I don't use either. I use Brummel and Brown Vegetable oil spread with natural yogurt. It tastes GREAT, and it is (last I heard) the only spread that Weight Watchers recommends in their point system... When I say it tastes good, I'm not talking about for health food. It tastes really good.

It's not bad, but it's still not butter (Sue me, when your a guest as someone's house you just have to go with what they got :sigh:). I was pretty sure that Brummel and Brown is margarine, but I decided what the heck I'll go look it up. So according to their official website they are a 'vegetable oil spread' not a 'margarine', but it looks like nothing more than marketing hype to me. :001_rolle
What’s the difference between a margarine and a soft spread?
People often separate soft spreads from regular margarine or stick margarine because the nutritional composition may be different. Soft spreads are usually lower in saturated and trans fat. Soft spreads typically contain less fat per serving than stick margarine –between 50-60% fat—and are made with a blend of vegetable oils like canola, soybean, olive and sunflower. Soft spreads may also contain other nutrients such as vitamin E and vitamin A and may be enriched with vitamin D and calcium.According to FDA standards, regular margarine must contain at least 80% fat, which can be from oils such as corn, safflower, soybean or sunflower. Margarine must also contain at least 10% vitamin A and may include optional ingredients such as vitamin D.

Whatever it is "officially" is irrelevant because to me, it is "sweet goodness"

Grandpa used to fake out the beagles with grapes when he was picking them off of the trellis. They loved to catch the grapes tossed their way. It went grape, grape, grape, worm pill, grape, grape... They never knew what hit 'em.

I remember growing up. My grandmother and mother kept a small bowl into which they poured the bacon drippings after preparing breakfast, which was always fried bacon, followed by eggs fried in the grease and toast or biscuits with butter. Sometimes they would drizzle some of the bacon grease into the butter. Rather than plain jelly, my father would mix the jelly with butter and honey and spread that on a piece of toast for the morning sweet tooth.
Doing all of that with margarine and turkey bacon (should be called turkey blasphemy) just wouldn't work.

Haha, I make fun of my mom for that. She's been vegetarian for about 30 years now, and will occasionally make fake bacon & peanut butter sandwiches, because she remembers how good they were as a kid. I've had both, the real stuff wins, but the fake non-meat bacon kicks the crap out of turkey bacon.

Butter. Is there really a question here? What is in margarine? I hate to know what is really in that stick. Many people use it thinking they are saving calories and fat but the are putting artificial junk in their body. We eat corn on the cob at least once a week and my hubby bought margarine and after grilling my corn it was dry and gross, we threw away. Tried again the next night (same corn & cook) with butter and was good. Coincidence? Maybe.

Butter, preferably unsalted. I add salt to taste anyway.
I don't like margarine much at all, and would prefer to use lard or plain vegetable oils rather than the chemical concoction that is margarine.
This coming from a chemistry major who does not believe aspartame causes cancer, nor that BPA was ever a serious threat. (Did you know all the canned food on the market has BPA in the liners, and nobody seems to care?) Margarine isn't necessarily BAD for you (unless it contains trans fats), but I like my food to come from a plant or animal, or maybe a kitchen, not from a lab.

Oil does not whip. To make a solid consistency from an unsaturated liquid oil requires a chemical change. Some products these days add coconut oil or another plant-based saturated fat to change the consistency. Once upon a time they all used catalytic hydrogenation -- the source of trans fats.
Did you know that Lard is unquestionably healthier for you than Crisco?
