A fatty, in the BBQ world, is a pork sausage roll stuffed with various goodies and then smoked slow and low. I have a Weber Smokey Mountain and have been wanting to try a fatty for a while. My parents were coming over today for a late lunch, so I decided to give one a try. Well, two actually.
This is the first one. Did it yesterday as a trial run.
Ingredients: Sausage, bacon, onion, peppers, cheese

These are getting cooked, chopped and stuffed in the sausage.

Onions and peppers. I dumped the bacon grease and scrapings into these.

Sausage flattened and ready for stuffing

Rolled with a bacon weave. It got a little overstuffed and I forgot to get a pic before it got rolled.

Put a little Salt Lick BBQ sauce on it and popped it on the Weber Smokey Mountain

Took about 2.5hrs to get it to 170F internal temp.

Fatty #2, turned out better. Spread the sausage out a bit more, added more cheese and got it to roll better.

I'll be honest, the title of this thread made me raise my eyebrows a bit. Now that I see what it's all about, I'm really glad I clicked on it. This is definitely something I am going to have to try. Do you have anymore recipes? Those look soooooo good.

The fatty looks great. I was thinking that this thread line was referring to cigars.
I've been so wanting to get a smoker but haven't gotten around to it. Every time I see something like this I start making plans to get one but something crops up and I don't.

Snook is out near College Station. Google maps says 103 miles, 2.5hrs from Austin, but it's more like a 2hr drive.

Surely y'all have places in Texas that make fresh sausage that is better than that Jimmy Dean? Over near Tallahassee, we have Bradley's (http://www.bradleyscountrystore.com/), but unfortunately they don't ship their fresh stuff, only the smoked. It is some fine sausage, though.

I've done a couple of these in the Egg. My first one sort of fell apart, but the second was great. My next one will be an Italian version, with pancetta, Italian sausage, peppers, onions, garlic, and provolone.

Among several other brands, we have both Jimmy Dean and Tennessee Pride, here. My family prefers Tennessee Pride. (Jimmy Dean is good, though.)
