I got 3 used pans on ebay 8.5", 10.5", and a 12 3/4". Anyone have any tips for seasoning them.

Yes, ignore the De Buyer instruction. Honestly it's rather wasteful less effective than wok seasoning technique, ideally you want to get the pans carbon black asap so I use wok seasoning technique for all my black iron.

A good degrease with hot water and detergent will replace boiling with potato skins, rinse and dry thoroughly, heat pan dry until it has discoloured evenly and wipe with oil then back on a low/med heat until it's smoking. Wipe off and repeat as necessary until no more black carbon residue comes off. No need to pour 1/2 gallon of olive oil in the pan, set yourself up with lint free rag and small cup of veg or nut oil for wiping.

Extractors on and smoke alarms off.

Great description. Exactly how I did mine. I have the same set, and love them! I use the small one to do the wife's eggs every morning. The large one I use for broiling fish w/ asparagus 1-2 times a week, turkey roll etc. They are the only non cast iron pans I use. Congrats!

Congratulations!

I would avoid nut and olive oil as the smoke point is too low. Lard is cheap and effective.

That's a great point. I did use olive oil and wound up holding it out a window while it smoked:lol:

Carbon pans are a love 'em or hate 'em thing. The more you use them, the better they get.

Whatever you use don't waste your money burning olive oil or avocado oil
