we got a dehydraton over the weekend.

put some fruit through it, but now it's time for the true test. does it make good jerky!? :001_tongu so i pulled out a cutting board (side question, how often should one oil a bamboo cutting board?) not a wooden one, but soft plastic (per Alton brown) took my (some ceap-o knife that i found and sharpened using the "Carter method") knife to some newspaper (per Murray Carter) washed it off. and got slicing about an inch wide and the butcher cut the sirloin1/20" wound up with 61 strips put them in a maranaid we're going to leave it there for 24 hours then go ahead and stick the strips in the dehydtaor.

i did notice that after roughly a pound of meat the knife was still sharp, didn't pass the three finger test but still shaved hair quite well (after i washed it of course) after taking it back to the newspaper. hope it all turns out well.:w00t:

I have no idea how your dehydrator works but 24 hours sounds like you are going to be left with little meat rocks. It's usually about 6-12 hours for me. Last time I did it overnight and had it on about 10 hours, and that was too much.

Of course, depends on how you cut it as well, I suppose. I'd keep an eye on it though, still sounds like potentially too much time to me.

Basic Marinade:

2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder

Options:

1 teaspoon liquid smoke
2-3 teaspoons Tabasco sauce
2-3 teaspoons crushed red pepper flakes

well. i've got the meat in the dehydrator. now all that's left is to wait 6 or some hours.
