View Full Version : Turkey leftover recipes
What's your favorite recipe for all that extra turkey?
Mine is pretty simple. I just chop up the turkey and put it into a casserole with stuffing and gravy. Perhaps top it with something crunchy and then heat it up in the oven.
My all time favorite is a turkey curry that Mom used to make. Alas, I have been unable to duplicate it.

That's what I had for breakfast, lunch and just now for dinner...
Turkey soap in a couple days.....
Turkey pot pie followed by turkey sandwich with stuffing and gravy.

Indeed, my wife made turkey pot pie this evening, and it was wonderful.
It is our tradition to serve a light gravy with turkey that is basically chicken stock with an egg drizzled into it to thicken it, and I'm fine with nuking leftover turkey drowned in the stuff.

SOAP or SOUP? I guess with it would go well with Bacon, like a turkey club...

One thanksgiving, a friend of mine used the leftovers to make a turkey sheperds pie. Which was excellent.

Chopped turkey in tomatillo sauce, lettuce, tomato, onion, jalapenos, sourcream, guacamole, cilantro, and lime, in fresh Tres Hermanos corn tortillas. Ariba!

A neighbor of mine passed along a turkey leg a wing to me, along with the giblets from his holiday dinner. Right now the giblets are simmering to make a gravy from, after which it'll be combined with some fresh made stuffing and the cut up turkey meat. The whole mess will then get tossed into a casserole (perhaps with some other ingredients) and baked in a hot oven until the top browns a bit. Should be good!

Since I didn't have the roast turkey pan to create the gravy in, I decided to fry up some bacon in the cast iron skillet and make the gravy with those "drippings." Added a bit of Gravy Master to give it some color and topped the casserole with the chopped bacon. Outstanding results!

All I have to say is that if you are still making leftover recipes from the Thanksgiving turkey, send them to the neighbors.:lol:
