What hat color would go with brown leather jacket?

Any shade of brown, but I prefer silver belly. In fact, I have a Stetson Open Road and a Borsolino both in Silver Belly or Silver Belly like felt. They are my default color because you can wear anything with them!

Believe it or not, a grey hat goes well. Brad Pitt wears a grey newsboy cap with his brown coats.

A grey hat with a multi colored band can go with anything as mine does. It works for casual or dress as well.

my only brown leather jacket is a Schott 585, which is a fairly dark brown, but works with anything but black.

and that's just to my modern eye. the whole "not mixing brown and black" is a modern fashion attitude.
