We went to the Chile Festival being held in the Brooklyn, Botanical Garden today and met some nice folks, selling cashews at one of the stands.

They had some interesting cashew preparations that we really liked, but what really caught my eye was the pictures of the raw .cashews, the cashew trees, etc.
If you open the link, there are four pictures across the top and you can see the cashew growing at the end of the fruit. The cashew is in a hard shell that is difficult to remove, without breaking the nut.
In addition to the cashews, they had a dip that was kind of like hummus, but made with ground cashews. She said she ground 4 ounces of nuts, thinned the powder with boiling water to desired consistency, stirred in some sauteed shallots and seasoned with S&P. It was pretty darn good!
